BROCCOLI MUSHROOM STIR-FRY


A protein-rich stir-fry you'll want to have on repeat.

Ingredients:

  • 1 – 5.3 oz package Brami Garlic & Rosemary Lupini Beans
  • 1 cup broccoli
  • 3 cups mushrooms (cremino/portabello or white)
  • 1/3 cup cashews
  • 4 cloves garlic
  • 2 tbsp olive oil
  • 2 tbsp vegetable broth
  • 1 1/2 tbsp liquid aminos (or soy sauce)
  • Black and red pepper to taste

 

Instructions:

  1. Wash and chop the broccoli.
  2. Wash and slice the mushrooms if necessary.
  3. Peel and dice the garlic.
  4. Saute the garlic in olive oil in a spaghetti-sized pot for 1-2 minutes.
  5. Add the broth and liquid aminos and bring to simmer.
  6. Add the Brami lupini beans, mushrooms, broccoli, and cashews. Cook for 5-7 minutes.
  7. Add black and red pepper to taste.
