HUMMUS STUFFED SWEET POTATOES

The perfect vegan side dish for any holiday meal.


You don’t need to be vegan to enjoy these festive stuffed sweet potatoes. This easy recipe is great to make for guests or even for a fun lunch.

 

Time: 1 hour 30 min.

Servings: 4

Ingredients:

  • 4 medium-sized sweet potatoes
  • Vegetable oil for baking
  • Lupini Bean Dip, Original Recipe
  • Pinch cayenne pepper
  • Salt and ground pepper to taste
  • 4 watermelon radishes, sliced
  • Micro-greens to garnish

 

Instructions:

  1. Preheat the oven to 375 degrees F.
  2. Scrub the sweet potatoes and place them on an oiled baking sheet. Bake for 1 hour 15 min or until tender.
  3. Let the sweet potatoes cool and slice the potato lengthwise, not all the way through.
  4. Add generous scoops of the lupini bean dip to the sweet potatoes. Top with cayenne pepper, salt, and pepper to taste.
  5. Garnish with watermelon radishes and micro-greens.
