Mix up your lunch with this stacked veggie and hummus sandwich. This vegan sandwich is hearty, healthy, and packed with flavor.

  • 2 slices bread of choice
  • 1 package - Mediterranean Olive Lupini Bean Hummus
  • 1 carrot, shredded
  • ½ kale, shredded
  • Red onion, in rings
  • ¼ cup arugula
  • 2 slices of tomato
  • Handful of bean sprouts
  • 1 tbsp olive oil
  • Salt & pepper to taste



  1. Toast bread to preferred toast level.
  2. Layer on the desired amount of hummus.
  3. Continue layering with the carrots, kale, onion, arugula, tomato, and sprouts.
  4. Drizzle on the olive oil over the top and sprinkle with salt and pepper.
  5. Layer on more hummus on the second piece of toast.
  6. Top the sandwich with the second piece and cut it in half, if desired.
