Caramelized Leek and Onion Spaghetti 🧅

Ingredients

  • 1 box Brami spaghetti

  • 2 sweet yellow onions, thinly sliced

  • 2 leeks, thinly sliced into rounds

  • 5-6 garlic cloves, thinly sliced

  • 5 tbsp olive oil

  • 2 tbsp chili crisp

  • 3-4 thyme springs

  • 1/2 cup parmesan cheese, plus more to serve

  • Salt, to taste

Instructions

  1. Add 2 tbsp olive oil and sliced onions to a cold pan. Heat to medium and cook slowly, stirring occasionally, until the edges start to brown. Add the leeks and season with salt once they begin to take on color. You want the leeks and onions to be soft with a little bit of texture - golden, not mushy.

  2. Once the onions and leeks are done, stir in fresh thyme leaves and let them bloom in the residual heat. Set the pan aside while you cook your pasta.

  3. Boil your pasta in generously salted water until al dente. Reserve 1 cup of pasta water before draining.

  4. In a small saucepan, heat 3 tbsp olive oil over medium heat for 2–3 minutes. Add the sliced garlic cloves, ensuring they’re fully submerged in the oil. Fry for 2–3 minutes until golden, then remove the garlic and transfer it to a towel to halt the cooking process.

  5. Add 1/4 cup freshly grated Parmesan to the onion mixture along with 1/4 cup pasta water. Stir until well combined. Continue adding the remaining cheese along with pasta water gradually until the sauce reaches your desired consistency.

  6. Toss the cooked pasta with the onion-leek mixture, adding splashes of pasta water as needed to loosen the sauce.

  7. Finish with a spoonful (or two) of chili crisp and a scatter of crispy fried garlic. Pile into bowls, shower with cheese, and serve immediately.
