Creamy Tomato Pasta
Your favorite marinara, made a little silkier. Mascarpone melts into a creamy tomato sauce that catches in every nook of Rotelle. Finish with a generous bunch of fresh basil and Parmesan, and dinner is ready.

Ingredients

1 box Rotelle

2 cups of your favorite marinara sauce

1 cup mascarpone cheese

¼ cup chopped fresh basil, plus more for serving

Pinch of red pepper flakes

Salt and freshly ground black pepper

Freshly grated Parmesan cheese, for serving
Instructions

Bring a large pot of generously salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain.

Meanwhile, add the marinara sauce, basil, and red pepper flakes to a large skillet. Bring to a gentle simmer over medium-low heat and cook while the pasta boils.

Reduce the heat to low and stir in the mascarpone until it has completely melted and the sauce is silky and smooth. Season to taste with salt and pepper.

Add the cooked pasta and toss until evenly coated. If needed, add reserved pasta water a little at a time to loosen the sauce.

Divide among bowls and finish with Parmesan and additional fresh basil.
