Farmers Market Pasta Salad 🌶️🍋

Ingredients

1 box Brami Radiatori

1 pint cherry tomatoes, halved

2 yellow squash, thinly sliced into half-moons

1 bunch asparagus, cut into 1-inch pieces

2 large roasted red peppers, roughly chopped

1 cup marinated artichoke hearts, roughly chopped

Olive oil, for sautéing

2 tsp lemon pepper
-
1/2 cup breadcrumbs, toasted

1 small shallot, finely minced

Juice of 1/2 large lemon

1/4 cup olive oil
-
1 1/2 tbsp honey
-
1/2 cup red wine vinegar

Salt and freshly ground black pepper, to taste
Instructions

Cook Brami pasta for 1-2 minutes less than package directions. Drain and quickly rinse under cool water. Then set aside to allow pasta to continue cooling.

Bring a small pot of water to a boil. Add asparagus and cook for 1–2 minutes until bright green and tender-crisp. Transfer immediately to a bowl of ice water to stop the cooking. Drain again and set aside.

In a large skillet, heat a drizzle of olive oil over medium heat. Add sliced yellow squash with lemon pepper. Cook for 3–4 minutes until lightly golden and just tender. Remove from heat.

In a small bowl or jar, combine minced shallot, lemon juice, honey, red wine vinegar, olive oil, and a big pinch of salt and pepper. Slowly whisk until emulsified. Taste and adjust seasoning.

In a large mixing bowl, combine radiatori, cherry tomatoes, roasted red peppers, blanched asparagus, sautéed squash, and chopped artichokes. Pour dressing over the salad and toss gently to coat everything evenly.

Let the salad sit for 10–15 minutes to absorb flavors, or chill until ready to serve. Finish with a touch of lemon zest and toasted breadcrumbs to serve.
