Penne alla Vodka with Brami Penne 🍅🥂

Ingredients

1 pack Brami Penne

¼ cup olive oil

1 onion, thinly sliced

1 (6 oz) can tomato paste

1 tbsp Calabrian chili paste

1 tbsp sugar

3 tbsp vodka (or water)

¼ cup heavy cream

Kosher salt, to taste
Instructions

Cook Brami Penne, reserving 1 cup of pasta water.

Caramelize the Onions: Heat olive oil over medium heat, add onion, season with salt, and cook for 5 minutes. Lower heat to medium-low and cook for another 20 minutes, stirring occasionally.

Build the Sauce: Raise heat to medium-high, stir in tomato paste, Calabrian chili paste, and sugar, and cook for 2 minutes. Add vodka and cook for 2 minutes, scraping up any browned bits.

Combine & Finish: Add reserved pasta water and bring to a boil. Toss in cooked pasta and simmer for 2 minutes, stirring until the sauce emulsifies. Remove from heat and stir in heavy cream.
