Penne alla Vodka with Brami Penne 🍅🥂

🕒 Prep & Cook Time: 30 min | Serves 2-3

Ingredients

  • 1 pack Brami Penne

  • ¼ cup olive oil

  • 1 onion, thinly sliced

  • 1 (6 oz) can tomato paste

  • 1 tbsp Calabrian chili paste

  • 1 tbsp sugar

  • 3 tbsp vodka (or water)

  • ¼ cup heavy cream

  • Kosher salt, to taste

Instructions

  1. Cook Brami Penne, reserving 1 cup of pasta water.

  2. Caramelize the Onions: Heat olive oil over medium heat, add onion, season with salt, and cook for 5 minutes. Lower heat to medium-low and cook for another 20 minutes, stirring occasionally.

  3. Build the Sauce: Raise heat to medium-high, stir in tomato paste, Calabrian chili paste, and sugar, and cook for 2 minutes. Add vodka and cook for 2 minutes, scraping up any browned bits.

  4. Combine & Finish: Add reserved pasta water and bring to a boil. Toss in cooked pasta and simmer for 2 minutes, stirring until the sauce emulsifies. Remove from heat and stir in heavy cream.
