Brothy Radiatori 🧀

Ingredients

  • 3 tablespoons extra-virgin olive oil, plus more for finishing

  • 3 garlic cloves, thinly sliced

  • 1 large or 2 small shallots, thinly sliced

  • 3 cups vegetable broth

  • 1/2 lemon, juiced, plus more for serving

  • 1 Parmesan rind

  • 12 oz Brami Radiatori

  • 1/2 cup freshly grated Parmesan, plus more for serving

  • ¼ cup fresh basil or chives, roughly chopped

  • Salt and pepper to taste

Instructions

  1. In a separate pot over medium heat, warm the olive oil and add the garlic and shallots. Cook for 2–3 minutes, until the shallots are translucent and the garlic is fragrant.

  2. Pour in the vegetable broth and bring it to a gentle simmer. Add the lemon juice and Parmesan rind, then let it simmer for about 10 minutes.

  3. Transfer the cooked pasta directly into the broth so it can soak up the flavor. Ladle into bowls and finish with grated cheese and fresh herbs.

  4. Add a squeeze of lemon on top and enjoy.
