Gatti 3 Cheese Garlic Mac and Cheese 🧄

Ingredients

½ tablespoon kosher salt (plus more to taste)

1 pound Brami Curly Mac

4 tablespoons unsalted butter
-
5 large cloves of garlic
-
¼ cup all-purpose flour
-
3 cups whole milk (room temperature)

4 tablespoons fresh chopped parsley (feel free to be liberal)
-
1 ½ cup (6 oz) shredded Fontina
-
1 ½ cup (6oz) Brie, rind removed and cubed
-
1 cup (4 oz) shredded Pecorino
-
Black pepper to taste (feel free to be liberal)

Optional garnish: ½ cup Italian breadcrumbs

Optional garnish: Red pepper flakes
Instructions

Bring a large pot of salted water to a boil. Add the Curly Mac and cook according to the package instructions (Al Dente recommended). Just before the pasta is ready, reserve 1 cup of pasta water and set aside. Drain pasta.

As the pasta cooks, dice the garlic. Heat a large sauté pan or pot over medium-low heat. Melt the butter in the pan and add the diced garlic. Lightly sauté the garlic for 1 to 2 minutes without burning it.

Gradually whisk in the flour to form a roux. Cook for 1 to 2 minutes until the roux becomes slightly golden. Gradually whisk in the milk, stirring continuously to prevent lumps. Continue to cook for about 6 minutes and whisk constantly until the mixture is thick enough to coat the back of a spoon.

Add the parsley to the mixture. Cook for 1 to 2 minutes to allow the flavors to develop. Remove from heat and gradually whisk in the Brie cubes, the Fontina, and the Pecorino until fully melted and smooth. If the sauce becomes too thick, add pasta water in small increments.

Stir the cooked pasta into the cheese sauce until evenly coated. Add more pasta water as needed to achieve your desired consistency. Season with salt and black pepper to taste as needed

Optionally, garnish with Italian breadcrumbs (if broiling), red pepper flakes, and/or additional chopped parsley.

Crisp it up: You can serve and enjoy as is, or before serving, transfer the cooked mac and cheese to a broiler-safe dish. Top with extra shredded cheese as desired, and broil for 5 to 8 minutes to crisp up the top. Watch closely to avoid burning the pasta!
