Bruschetta Pasta Salad

Bruschetta Pasta Salad with Toasted Breadcrumbs 🍅🧄🍞

Ingredients

  • ½ pack Brami Fusilli 

  • ½ white onion, finely chopped

  • 12 oz cherry tomatoes, chopped

  • ¼ cup toasted breadcrumbs

  • Handful of fresh basil, chopped

Dressing

  • 4 cloves garlic, minced

  • 1 tbsp red wine vinegar

  • 2 tbsp balsamic vinegar

  • 2 tbsp olive oil

  • Salt & freshly ground black pepper, to taste

Instructions

  1. Bring a pot of salted water to a boil and cook the Fusilli until al dente. Drain, rinse under cold water to stop the cooking, and set aside.

  2. In a small bowl or jar, whisk together the minced garlic, red wine vinegar, balsamic vinegar, olive oil, salt, and pepper.

  3. In a large bowl, combine the cooked pasta, chopped cherry tomatoes, white onion, and basil. Pour the dressing over and toss well to coat.

  4. Just before serving, sprinkle the toasted breadcrumbs over the top for that bruschetta-inspired texture.

  5. Serve chilled or at room temperature. Add extra basil or a drizzle of balsamic vinegar for extra flavor!
