Broccoli Pesto Pasta 🌱🍋

Ingredients

  • ½ lb Brami Penne

  • 1 small head broccoli, cut into florets

  • 1/4 cup pine nuts, toasted

  • 1/2 cup fresh grated Parmesan + more for serving

  • 1 clove garlic

  • 1/4 cup olive oil

  • Handful of fresh basil

  • Salt and pepper to taste

  • Squeeze of lemon juice

Instructions

  1. Cook pasta according to package instructions. 

  2. Meanwhile, bring a medium pot of water to boil and place a bowl of ice water nearby. Blanch the broccoli in the boiling water for 30 seconds, then scoop it into the ice water to stop the cooking process. Drain.

  3. Add blanched broccoli to a food processor along with the remainder of the ingredients. Pulse until combined. Toss pesto with cooked pasta, season to taste, and enjoy topped with more grated Parmesan.
