Ingredients

1/3 cup whole milk ricotta

1 lemon, very thinly sliced on a mandolin (seeds removed)

1 small head of radicchio, leaves separated

1 ruby red grapefruit, segmented

1/2 cup pickled red beets, sliced into matchsticks or wedges

1/2 avocado, cubed
-
1/4 cup Brami Mediterranean Medley Lupini Beans

2 tablespoons pickled shallots with celery seeds
Dressing:

Juice of 1 lemon

2 tablespoons olive oil

Salt & freshly ground black pepper, to taste
Instructions

Spread a generous dollop of ricotta in the center of your plate or shallow bowl.

Arrange the thinly sliced lemon rounds over the ricotta. They’ll bring bright acidity and a bit of chew.

Layer whole leaves of radicchio over the lemon and ricotta, letting some of the lemon peek through for color and balance.

Nestle the grapefruit segments between the radicchio leaves. Scatter the pickled beets, cubed avocado, and lupini beans across the top.

Spoon the pickled shallots with celery seeds over everything for a sharp, aromatic finish.

In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Drizzle generously over the entire salad just before serving.
