Creamy Sun Dried Tomato Soup 🥕🧄

Ingredients

2 tbsp oil from jar of sun dried tomatoes

1 small onion, diced

1 large carrot, diced

1 bulb fennel, diced

2 garlic cloves, minced

1 teaspoon kosher salt, plus more to taste

1/2 teaspoon black pepper, plus more to taste

2 teaspoons Italian seasoning

1 teaspoon red pepper flakes

1 (7oz) jar sun dried tomatoes in oil, drained and chopped

1 (15 oz) can crushed tomatoes

2 (32 oz) boxes vegetable stock

1 box Brami Radiatori

1 (5oz) bag spinach, roughly chopped

1 cup heavy cream
Instructions

Heat oil from sundried tomatoes in a large pot over medium heat. Add onion, carrot, fennel, garlic salt, pepper, Italian seasoning, and red pepper flakes. Cook and stir until the vegetables begin to soften, about 5 minutes.

Add sun dried tomatoes, crushed tomatoes, and vegetable stock. Stir well. Bring to a boil, then stir in pasta. Turn down heat and simmer for about 15 minutes, or until the vegetables are tender and pasta is cooked through.

Stir in spinach and heavy cream. Taste and adjust seasoning.

Ladle into bowls and garnish with fennel fronds and freshly cracked black pepper. Enjoy!
