Hidden Veggie Fusilli 🥒🥕

Ingredients

  • 1 zucchini, chopped

  • 1 lb campari tomatoes 

  • 1 red pepper, chopped 

  • 2 carrots, chopped

  • 1/2 yellow onion, quartered 

  • Olive oil, for drizzling

  • 2 tsp Italian seasoning

  • 1 tsp red pepper flakes 

  • Salt and pepper to taste

  • 1/4 cup vegetable broth

  • 1/4 cup heavy cream

  • 1 box Brami Fusilli

  • Parmesan cheese, for serving

  • Fresh basil, for serving 

Instructions

  1. Preheat oven to 425°F. Arrange vegetables on a baking sheet and drizzle liberally with olive oil. Season with Italian seasoning, red pepper flakes, salt, and pepper. Roast for 20-25 minutes, or until softened. 

  2. While the vegetables roast, cook pasta according to package instructions. 

  3. Add roasted vegetables to a blender with vegetable broth and cream. Blend until smooth. 

  4. Pour sauce over cooked pasta. Toss to combine, then taste and adjust seasoning as needed. Serve topped with fresh grated parm and basil.
