Stovetop Mac and Cheese 🧀

Ingredients

1 pack Brami Curly Mac

4 tbsp heavy cream

2 cups vegetable broth

2 cloves garlic
-
2 cups shredded white cheddar
-
2 cups shredded sharp cheddar

5 tbsp butter
-
2 tbsp flour
-
1/2 tsp white pepper
-
1/4 tsp onion powder

1/4 tsp paprika

Salt and pepper to taste
Instructions

In a large skillet, heat 2 tbsp butter over medium heat until melted. Add the minced garlic and cook until softened. Season with salt.

Add the Curly Mac pasta and stir to coat in the butter and garlic. Add about 1/3 of the vegetable broth and cook over medium heat, stirring occasionally, until most of the liquid has evaporated.

Repeat this process, adding broth in thirds and stirring, until the pasta is al dente and there is still a bit of liquid remaining in the pan. Keep the heat at a gentle simmer (not a full boil) so the pasta cooks slowly and absorbs the broth without drying out.

Meanwhile, in a separate saucepan, melt the remaining butter over low heat. Whisk in the flour, white pepper, and onion powder. Cook, stirring constantly, for 1-2 minutes until the mixture is bubbly and smooth but not browned.

Gradually whisk in the heavy cream, stirring until the sauce thickens slightly and is smooth. Lower the heat and add both shredded white cheddar and sharp cheddar gradually, stirring until fully melted and smooth. Stir in paprika and salt to taste.

Add the cooked pasta and any remaining liquid from the skillet into the cheese sauce. Stir gently to coat all the pasta in the creamy sauce. If the sauce is too thick, add a splash of broth or cream to loosen it. Taste and adjust salt and pepper as needed.

Serve warm. Optionally, garnish with chives or breadcrumbs!
