Sungold Tomato Curly Mac 🍅

Ingredients:

2 tbsp olive oil

1/2 small yellow onion, diced

2 cloves garlic, minced

2 pints sungold tomatoes, halved

1/2 lb Brami curly mac

1 tbsp butter
-
Juice from ½ lemon
-
Salt
-
Pepper
-
Red pepper flakes

Parmesan, for serving

Fresh basil, for serving
Instructions:

Heat oil in a large skillet over medium heat. Add onion and garlic. Cook until softened and fragrant. Stir in tomatoes. Season with salt, pepper, and red pepper flakes to taste.

Turn the heat down to low and cover, stirring occasionally, until a jammy sauce forms.

While the sauce is simmering, cook the pasta according to package instructions, saving at least 1 cup pasta water.

Use an immersion blender (or transfer to a regular blender) to blend the tomatoes until smooth, then stir in the butter and lemon juice.

Add cooked pasta to the tomato sauce. Toss to coat. Add a little pasta water at a time to thin out the sauce if needed.

Serve topped with fresh grated Parmesan and basil.
