Spicy Fusilli alla Vodka 🌶️

Ingredients

1 pack Brami Fusilli

2 tbsp olive oil

1 shallot, chopped

1 (6 oz) can tomato paste

1 tsp red pepper flakes

3 tbsp vodka (or water)

1/3 cup heavy cream

Salt, to taste
Instructions

Cook Brami Fusilli, reserving 1 cup of pasta water.

Heat olive oil over medium heat, add shallot and cook for 5 minutes. Lower heat to medium-low and cook for another 5 minutes, stirring occasionally.

Raise heat to medium-high, stir in tomato paste and red pepper flakes. Cook for 2-3 minutes. Add vodka and cook for another 2 minutes, scraping up any browned bits.

Add heavy cream and stir until the sauce emulsifies. Reduce heat to low and simmer gently for 5–7 minutes, stirring occasionally, until the sauce thickens and flavors meld.

Add reserved pasta water in ¼ cup increments to loosen the sauce to your desired consistency.

Toss in cooked pasta and simmer for 2 minutes. Remove from heat, garnish with more red pepper flakes, and serve!
