Italian Sub Pasta Salad

Italian Sub Pasta Salad

🕒 Prep & Cook Time: 20 min | Serves 4

Ingredients:

  • 8 oz Brami Cubetti

  • 1/2 cup chopped salami

  • 1/4 cup chopped green olives

  • 1 cup cherry tomatoes, halved

  • 8 pepperoncini, chopped

  • 1/2 cup chopped red onion

  • 4 slices provolone cheese, chopped

  • 2 Tbsp chopped chives, plus more for garnish

For the dressing:

  • 1/2 cup mayonnaise

  • 1/3 cup red wine vinegar

  • 1 tsp dijon mustard

  • 1 garlic clove, grated

  • 1 tsp honey

  • 1/4 tsp salt

  • 1/4 tsp pepper

  • 1/2 tsp Italian seasoning

Instructions

  1. Cook pasta according to package directions. Drain, then toss with a drizzle of olive oil to prevent sticking. 

  2. Whisk all the dressing ingredients together at the bottom of a large bowl. Taste and adjust seasoning as needed.

  3. Add the cooled pasta and the rest of the ingredients to a large bowl. Toss until everything is well combined. Taste and adjust seasoning as needed. Garnish with chives.
