Italian Sub Pasta Salad

Ingredients:

8 oz Brami Cubetti

1/2 cup chopped salami

1/4 cup chopped green olives

1 cup cherry tomatoes, halved

8 pepperoncini, chopped

1/2 cup chopped red onion
-
4 slices provolone cheese, chopped

2 Tbsp chopped chives, plus more for garnish
For the dressing:

1/2 cup mayonnaise

1/3 cup red wine vinegar

1 tsp dijon mustard
-
1 garlic clove, grated
-
1 tsp honey
-
1/4 tsp salt
-
1/4 tsp pepper
-
1/2 tsp Italian seasoning
Instructions

Cook pasta according to package directions. Drain, then toss with a drizzle of olive oil to prevent sticking.

Whisk all the dressing ingredients together at the bottom of a large bowl. Taste and adjust seasoning as needed.

Add the cooled pasta and the rest of the ingredients to a large bowl. Toss until everything is well combined. Taste and adjust seasoning as needed. Garnish with chives.
