One Pot Pasta with Mushrooms & Spinach

This One-Pot Pasta with Mushrooms & Spinach is our go-to when we want something hearty and nourishing but don’t feel like juggling three different pans. Earthy mushrooms, garlicky tomato sauce, tender greens, and a shower of Parmesan — all wrapped around curly, sauce-catching pasta.

And because we’re using Brami Curly Macaroni, you get that perfect al dente bite plus a little protein boost in every forkful. 

Ingredients (Serves 6)

  • 2 Tbsp olive oil

  • 1 small onion, chopped

  • 1 (8 oz) package mushrooms, sliced

  • 2 cloves garlic, minced

  • 2 cups vegetable broth

  • 1 (24 oz) jar passata

  • 1 box Brami Curly Macaroni

  • 2 generous handfuls fresh baby spinach

  • Salt and freshly cracked black pepper, to taste

  • Red pepper flakes (optional, but recommended)

  • 1 bunch fresh basil, torn

  • Freshly grated Parmesan, for serving

How to Make It

Step 1: Build the flavor.
Heat the olive oil in a large Dutch oven over medium heat. Add the chopped onion and sliced mushrooms. Cook, stirring occasionally, until the mushrooms release their moisture and begin to brown — about 5–7 minutes. This is where the depth happens, so let them get golden.

Step 2: Add aromatics.
Stir in the garlic, salt, pepper, and red pepper flakes. Cook for another 1–2 minutes, until fragrant.

Step 3: Simmer the sauce.
Pour in the vegetable broth and passata. Bring to a boil, then stir in the Brami Curly Macaroni. Reduce heat to maintain an active simmer.

Step 4: Let the pasta cook.
Cover and cook, stirring occasionally, until the pasta is al dente and the sauce has thickened slightly. Because everything cooks together, the pasta absorbs flavor as it softens — no draining required.

Step 5: Finish with greens.
Uncover and stir in the spinach and torn basil. Cook just until wilted. Taste and adjust seasoning as needed.

Step 6: Serve generously.
Ladle into bowls and finish with freshly grated Parmesan and an extra pinch of red pepper flakes.
