Zucchini Radiatori

Zucchini Radiatori 🥒 🍋

Ingredients

  • ½ lb Brami Radiatori

  • 2 tbsp olive oil

  • 3 medium zucchini, grated

  • 2 cloves garlic, minced

  • Red pepper flakes

  • Salt

  • Pepper

  • 2 tbsp butter

  • Juice from 1/2 lemon, more to taste

  • 1 cup grated Parmesan cheese + more for serving

  • Fresh basil, for serving

Instructions

  1. Cook pasta according to package instructions, making sure to reserve 1.5 cups of the pasta cooking water.

  2. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the zucchini, garlic, chili flakes, salt, and pepper. Cook until the zucchini is golden, about 5 minutes. 

  3. Mix in the butter and lemon juice.Add 1 cup of reserved pasta water and bring to a simmer over medium heat. 

  4. Add the pasta and Parmesan and toss until combined. Add more pasta water if needed to thin the sauce. 

  5. Serve topped with fresh basil and more grated Parmesan. Enjoy!
