AVOCADO LUPINI HUMMUS

Step aside, guacamole.


Creamy, tangy, and slightly sweet - this Avocado Lupini Hummus is a great alternative to guacamole, for when you want a dip that's packed with extra protein from the lupini beans.

 

Time: 10-15 minutes

Servings: 3-4

Ingredients:

  • 5.3 oz bag Sea Salt & Vinegar Brami Lupini Beans
  • 2 cloves garlic
  • 3 tbsp olive oil
  • 1 large, ripe avocado
  • 1/2 tsp cumin
  • 1/4 cup fresh cilantro
  • 1 lemon, juiced
  • Salt & pepper to taste
  • Ground coriander seed, for topping

 

Instructions:

  1. Add lupini beans, garlic, olive oil, and lemon juice in a food processor and pulse until smooth. Feel free to add a bit more olive oil to smooth out the consistency if desired.
    2. Add the avocado, cumin, cilantro, salt, and pepper. Pulse until mixture is smooth and combined.
    3. Taste and see if any further salt, pepper, or lemon juice are needed.
    4. Serve with ground coriander seed on top. Enjoy!
