Cheese sauce packed with veggies, what more could you want?

Cauliflower is one of the most versatile vegetables out there. This recipe uses it to make a rich, cheesy sauce that is perfect for kids who won't have a clue it's packed with veggies!


Time: 30 min.

Servings: 3-4


  • 8 oz Brami Radiatori pasta
  • 2 cups cooked cauliflower florets
  • 2 garlic cloves
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp olive oil
  • 1 cup milk of choice
  • 1/4 cup nutritional yeast
  • 1/2 cup vegan cheese
  • 1/2 lemon, juiced



1. Preheat oven to 350º
2. Toss the cauliflower on a baking sheet and cook for 12 minutes.
3. Meanwhile, bring a pot of water to a boil and cook the Brami pasta as directed.
4. When the cauliflower is finished, add to a blender with all the ingredients except one tablespoon of oil and vegan cheese. Blend until smooth.
5. Add the oil to a pan over medium heat, then pour in the cauliflower mixture. Heat until it begins to slightly simmer. Add the vegan cheese and whisk until smooth on low heat. This takes about 6-8 minutes.
6. Turn off heat, add the pasta, and stir together.
7. Feel free to top with breadcrumbs or herbs.
8. Enjoy!
