This herby & savory lupini pesto is perfect for eating on top of toast.

Have you ever added lupini beans to your homemade pesto? It's an awesome way to get in some extra plant-based protein, and extra flavor! Top with ripe tomatoes for a perfect breakfast.

Time: 10 min.

Servings: 1-2

  • 5 oz Brami Lupini beans
  • Bread of choice
  • 1 tomato, sliced
  • 1/2 cup basil
  • 1/4 cup parsley
  • 1 tbsp nutritional yeast
  • 1/4 cup + 2 tbsp extra virgin olive oil
  • 1 clove garlic
  • Salt and pepper, to taste

1. Make the pesto by adding the basil, parsley, nutritional yeast, and garlic in a food processor. Pulse until everything is chopped.
2. Slowly add ¼ cup of oil while pulsing until it is smooth. Add the Brami Lupini Beans and pulse until minced. If it still needs oil, add the remaining oil until it reaches your desired consistency. Set aside.
3. In a pan over medium heat add 2 tbsp of olive oil and the bread slice. Toast for 3-4 minutes per side or until golden. Remove once crispy and golden brown.
4. Assemble the toast by adding the pesto to the bread and then finishing with tomato slices, salt and pepper.
5. Enjoy!
